Sensory Dissection
Flavor
Assam
Assam is a full-bodied black tea from northeast India, grown in a hot river-valley climate. The cup is malty and robust with notes of honey, toasted grain, and dried fruit, plus enough strength to stand up to milk and sugar. Second-flush Assam adds a characteristic caramelized sweetness. It is the backbone of many breakfast blends, including English Breakfast.
Darjeeling
Darjeeling grows high in the Himalayan foothills and is often called the 'champagne of teas.' First flush (spring) lots are light, bright, and floral with a distinctive muscatel grape note; second flush adds ripe fruit and spice. The body is lighter than Assam, with a brisk, clean finish. It is best enjoyed without milk to appreciate its aroma.
