Sensory Dissection
Flavor
Bai Lin Gong Fu
Bailin Gong Fu is a classic Fujian gong fu black tea from the Bailin area near Fuan. The cup is notably sweet and smooth, with honey, ripe fruit, and a light caramelized depth that lingers on the finish. Compared with Keemun it is rounder and less cocoa-driven, and good examples carry a pleasant natural sweetness that persists through a second infusion. It is one of the 'Min Hong' teas that built Fujian's export reputation in the 19th century.
Tan Yang Gong Fu
Tan Yang Gong Fu is one of Fujian's historic gong fu black teas, from the Tan Yang area near Fuan. The cup is sweet and refined with honey, dried fruit, and a subtle floral edge over a smooth, medium body. Properly made lots show the polished character that made Fujian blacks famous abroad in the 19th century — sweet, clean, and aromatic without heaviness. It rewards unhurried brewing and holds its sweetness through a second infusion.
