Sensory Dissection
Flavor
Ceylon White
Ceylon white tea is one of Sri Lanka's rarest teas, made from silver-tipped buds plucked from high-elevation gardens. The cup is light yet rich: honey, sweet corn, and a delicate floral lift over a soft, rounded body with almost no astringency. Production is tiny and prices high, so genuine examples are uncommon outside specialty shops. It rewards gentle brewing with cooler water and short steeps to keep the cup clear.
Darjeeling White
Darjeeling white tea is hand-plucked from Himalayan gardens, usually just the silvery buds and youngest leaves. The cup is delicate and bright with muscatel grape, fresh florals, and a crisp, light body that finishes clean. Compared to Chinese whites it is more aromatic and brisk, showing Darjeeling's signature high-grown character. Production is limited to a few gardens and harvests, making it a sought-after specialty.
