Sensory Dissection

Flavor

Chen Nian Shu

WoodyEarthySmoothSweet

Chen Nian Shu, aged ripe pu-erh, has rested long enough for the sharper edges of pile fermentation to soften. The cup is deep and clean: camphor, old wood, dried jujube, and a mellow earthy sweetness with a thick, settled body. Brewing brings out a warming, calming character quite different from young shu. Age smooths and integrates the tea, so well-stored cakes from good producers are prized by drinkers.

Lao Cha Tou

SmoothEarthySweetWoody

Lao Cha Tou, or Old Tea Head, refers to the nuggets that form naturally during shu pu-erh pile fermentation, where leaves clump together under heat and moisture. These dense balls brew extra thick and smooth: dark dates, caramel, and forest floor with almost no bitterness and a long, sweet finish. They are very forgiving to steep and slowly unravel over many infusions, often lasting longer than loose ripe leaves.
