Sensory Dissection
Flavor
Dong Ding
Dong Ding is a classic Taiwanese ball-rolled oolong from Lugu township. It balances gentle oxidation with a medium roast, giving a cup that is both creamy and toasty: sweet baked-grain notes, orchid florals, and a smooth, thick body. Quality examples finish with a clean honeyed sweetness that grows over repeated infusions.
GABA Oolong
GABA oolong is processed in a nitrogen-rich environment that converts glutamate into gamma-aminobutyric acid, giving the tea a distinctive tangy-sweet profile. The cup is smooth and fruity — often compared to sour plum or dried apricot — with a thick, cooling body and a long, clean finish. It is typically made from mid-oxidation Taiwanese leaf and is popular as an evening tea.
