Sencha
Sencha is Japan's everyday green tea, made by steaming the leaves to lock in a vivid green color. The cup is fresh and grassy with a pleasant vegetal depth, a gentle sweetness, and a clean, slightly brisk finish. Higher grades from the first harvest (shincha) add a softer, more umami-rich body. It pairs naturally with food and handles a second steeping well.
Tamaryokucha
Tamaryokucha is a curled Japanese green from Kyushu, rolled into comma shapes rather than the needle shape of sencha. The cup is rich and grassy with a deep steamed-vegetable body, pleasant marine notes, and a natural sweetness. Some versions are pan-fired instead of steamed, tasting slightly more roasted. It is less common outside Japan but prized for its full flavor.
